Description

A delicious and crispy Parmesan crusted chicken served with a flavorful basil aioli.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/2 cup mayonnaise
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, mix the Parmesan cheese and breadcrumbs.
  3. In another dish, beat the eggs.
  4. In a third dish, place the flour.
  5. Season the chicken breasts with salt and pepper.
  6. Dredge each chicken breast in flour, dip in the beaten eggs, and then coat with the Parmesan and breadcrumb mixture.
  7. Place the coated chicken breasts on a baking sheet.
  8. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  9. While the chicken is baking, prepare the basil aioli by mixing mayonnaise, chopped basil, minced garlic, and a pinch of salt in a bowl.
  10. Serve the chicken hot with the basil aioli on the side.

Notes

  • For extra flavor, marinate the chicken in lemon juice for 30 minutes before coating.
  • Feel free to add spices to the breadcrumb mixture for a kick.
  • This dish pairs well with a side salad or roasted vegetables.
