Description
A delicious and crispy Parmesan crusted chicken served with a flavorful basil aioli.

- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1/4 cup all-purpose flour
- 1/2 cup mayonnaise
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, mix the Parmesan cheese and breadcrumbs.
- In another dish, beat the eggs.
- In a third dish, place the flour.
- Season the chicken breasts with salt and pepper.
- Dredge each chicken breast in flour, dip in the beaten eggs, and then coat with the Parmesan and breadcrumb mixture.
- Place the coated chicken breasts on a baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
- While the chicken is baking, prepare the basil aioli by mixing mayonnaise, chopped basil, minced garlic, and a pinch of salt in a bowl.
- Serve the chicken hot with the basil aioli on the side.
Notes
- For extra flavor, marinate the chicken in lemon juice for 30 minutes before coating.
- Feel free to add spices to the breadcrumb mixture for a kick.
- This dish pairs well with a side salad or roasted vegetables.
