- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup fresh mozzarella, sliced
- 1 large tomato, sliced
- 1/2 cup basil pesto
- 4 slices of ciabatta bread
- 2 tablespoons olive oil
- Fresh basil leaves for garnish
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes.
- Slice the grilled chicken and layer it on the ciabatta bread.
- Add slices of fresh mozzarella and tomato on top of the chicken.
- Spread basil pesto over the top and add fresh basil leaves.
- Top with the other slice of ciabatta bread and drizzle with olive oil.
- Serve immediately and enjoy!
Notes
- For a vegetarian option, substitute chicken with grilled eggplant or zucchini.
- Feel free to add arugula or spinach for extra greens.
