- 1 cup pumpkin puree
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and bell pepper, sauté until softened.
- Stir in minced garlic, cumin, and chili powder, cooking for another minute.
- Add pumpkin puree and black beans, mixing well.
- Pour in vegetable broth and bring to a simmer.
- Season with salt and pepper, and let it cook for 20-30 minutes.
- Serve hot, garnished with your choice of toppings.
