Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup pumpkin puree
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened.
  3. Stir in minced garlic, cumin, and chili powder, cooking for another minute.
  4. Add pumpkin puree and black beans, mixing well.
  5. Pour in vegetable broth and bring to a simmer.
  6. Season with salt and pepper, and let it cook for 20-30 minutes.
  7. Serve hot, garnished with your choice of toppings.
