- 6 large eggs
- 1/4 cup canned pumpkin puree
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon pumpkin pie spice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Hard boil the eggs by placing them in a pot of water, bringing it to a boil, then covering and letting them sit for 12 minutes.
- Cool the eggs in ice water, then peel them and slice in half lengthwise.
- Remove the yolks and place them in a bowl.
- Add pumpkin puree, mayonnaise, Dijon mustard, pumpkin pie spice, salt, and pepper to the yolks and mix until smooth.
- Fill the egg whites with the pumpkin yolk mixture.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a dash of hot sauce to the filling.
- These can be made a day in advance; just keep them refrigerated until serving.
- Adjust the pumpkin pie spice according to your taste preference.
