- 1/3 cup buttermilk

- 2 teaspoons red liquid food coloring
- 4 ounces cream cheese (softened)
- For the crumb topping:
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 2 tablespoons unsalted butter (diced)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a non-stick muffin pan.
- Make the crumb topping by mixing sugar and flour; cut in the butter until coarse crumbs form.
- Prepare the cream cheese filling by blending softened cream cheese with sugar and vanilla extract until smooth.
- Combine dry ingredients in a large bowl and whisk together.
- Mix wet ingredients in another bowl until smooth.
- Gently add wet ingredients into the dry ingredients, mixing until just moistened.
- Fold in the cream cheese mixture carefully.
- Fill muffin cups about two-thirds full.
- Top with crumb mixture.
- Bake for 17 to 19 minutes, or until a toothpick comes out clean.
Notes
For best results, ensure cream cheese is at room temperature. Batter can be made ahead and stored in the fridge for 24 hours.
