Ingredients

  • 1 large egg
  • 1/2 cup canola oil
  • 1/3 cup buttermilk
  • 2 tablespoons natural cocoa powder
  • 2 teaspoons red liquid food coloring
  • 4 ounces cream cheese (softened)
  • For the crumb topping:
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter (diced)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a non-stick muffin pan.
  2. Make the crumb topping by mixing sugar and flour; cut in the butter until coarse crumbs form.
  3. Prepare the cream cheese filling by blending softened cream cheese with sugar and vanilla extract until smooth.
  4. Combine dry ingredients in a large bowl and whisk together.
  5. Mix wet ingredients in another bowl until smooth.
  6. Gently add wet ingredients into the dry ingredients, mixing until just moistened.
  7. Fold in the cream cheese mixture carefully.
  8. Fill muffin cups about two-thirds full.
  9. Top with crumb mixture.
  10. Bake for 17 to 19 minutes, or until a toothpick comes out clean.

Notes

For best results, ensure cream cheese is at room temperature. Batter can be made ahead and stored in the fridge for 24 hours.
