- 2 ripe bananas, mashed

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder

Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Combine ricotta cheese, mashed bananas, sugar, vegetable oil, eggs, vanilla extract, lemon zest, and orange zest in a large mixing bowl. Whisk until blended.
- Whisk together all-purpose flour, baking powder, baking soda, and salt in another medium bowl.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for a few minutes in the pan before transferring to a wire rack.
