  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Combine ricotta cheese, mashed bananas, sugar, vegetable oil, eggs, vanilla extract, lemon zest, and orange zest in a large mixing bowl. Whisk until blended.
  3. Whisk together all-purpose flour, baking powder, baking soda, and salt in another medium bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool for a few minutes in the pan before transferring to a wire rack.
