  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup melted butter

  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with liners or grease it.
  2. In a large bowl, whisk together the ricotta cheese, sugar, eggs, melted butter, vanilla extract, and orange zest.
  3. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  5. Gently fold in the cranberries.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For customization, swap cranberries for blueberries or chopped apples. A sprinkle of cinnamon adds warmth.
