- 1 cup ricotta cheese
- 1 cup fresh cranberries (or dried cranberries)
- 1 tablespoon orange zest
- 1/2 cup sugar
- 2 large eggs
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with liners or grease it.
- In a large bowl, whisk together the ricotta cheese, sugar, eggs, melted butter, vanilla extract, and orange zest.
- In a separate bowl, mix the flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined.
- Gently fold in the cranberries.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
Notes
For customization, swap cranberries for blueberries or chopped apples. A sprinkle of cinnamon adds warmth.
