Ingredients

Scale
  • 1.5 lbs flank steak
  • 2 lbs baby potatoes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the flank steak.
  4. Place the flank steak in a roasting pan.
  5. Cut the baby potatoes in half and toss them in the remaining oil mixture.
  6. Add the potatoes around the flank steak in the roasting pan.
  7. Roast in the oven for 25-30 minutes, or until the steak reaches your desired doneness.
  8. Let the steak rest for 10 minutes before slicing.
  9. Serve the sliced steak with roasted potatoes.

Notes

  • For best results, use a meat thermometer to check the steak’s internal temperature.
  • Allowing the steak to rest helps retain its juices.
  • Feel free to add other vegetables to the roasting pan for variety.
