- 2 lbs baby potatoes
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the flank steak.
- Place the flank steak in a roasting pan.
- Cut the baby potatoes in half and toss them in the remaining oil mixture.
- Add the potatoes around the flank steak in the roasting pan.
- Roast in the oven for 25-30 minutes, or until the steak reaches your desired doneness.
- Let the steak rest for 10 minutes before slicing.
- Serve the sliced steak with roasted potatoes.
