Description

A vibrant and nutritious salad featuring roasted carrots and radishes combined with quinoa, perfect for a healthy meal.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 4 medium carrots, peeled and sliced
  • 4 radishes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water and combine it with water in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. While the quinoa cooks, toss the sliced carrots and radishes with olive oil, salt, and pepper on a baking sheet.
  4. Roast the vegetables in the oven for 20-25 minutes, or until tender and slightly caramelized.
  5. Once the quinoa is cooked, fluff it with a fork and mix in the roasted vegetables.
  6. Add lemon juice and stir to combine.
  7. Garnish with fresh parsley before serving.
