Description

A delightful pasta dish featuring sweet roasted cherry tomatoes that add a burst of flavor, reminiscent of candy.


Ingredients

  • 1 pound cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces pasta of choice
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, toss cherry tomatoes with olive oil, salt, and pepper.
  3. Roast in the oven for 20-25 minutes until the tomatoes are blistered and caramelized.
  4. Meanwhile, cook the pasta according to package instructions until al dente.
  5. Drain the pasta and reserve some pasta water.
  6. Add the roasted tomatoes to the pasta, along with fresh basil and Parmesan cheese.
  7. Toss everything together, adding reserved pasta water as needed to create a sauce.
  8. Serve warm and enjoy!
