Description

Ingredients

  • 4 pork chops (bone-in or boneless)
  • 1.5 lb Yukon Gold potatoes, cut into cubes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme or rosemary
  • Optional: broccoli, Brussels sprouts, or carrots

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes by washing and cutting them into even-sized cubes. Toss in olive oil, salt, pepper, and herbs.
  3. Season the pork chops with salt, pepper, garlic powder, and optional herbs.
  4. Arrange the potatoes in a single layer on a sheet pan, leaving space for the pork chops in the center.
  5. Place the seasoned pork chops on top of the potatoes.
  6. Roast in the oven for 25-30 minutes until the pork reaches 145°F and potatoes are golden brown.
  7. Rest the pork chops for 5 minutes before serving.
