- 4 pork chops (bone-in or boneless)
- 1.5 lb Yukon Gold potatoes, cut into cubes
- 3 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme or rosemary
- Optional: broccoli, Brussels sprouts, or carrots
Instructions
- Preheat the oven to 425°F (220°C).
- Prepare the potatoes by washing and cutting them into even-sized cubes. Toss in olive oil, salt, pepper, and herbs.
- Season the pork chops with salt, pepper, garlic powder, and optional herbs.
- Arrange the potatoes in a single layer on a sheet pan, leaving space for the pork chops in the center.
- Place the seasoned pork chops on top of the potatoes.
- Roast in the oven for 25-30 minutes until the pork reaches 145°F and potatoes are golden brown.
- Rest the pork chops for 5 minutes before serving.
