- 12 oz shrimp
- 2 avocados
- 1 mango
- 1 small red onion
- 1 handful cilantro
- 1 small jalapeño
- 2 limes
- 1 tsp chili powder
- 2 tbsp olive oil
- 1 tsp honey
- 1 tsp salt
- 0.5 tsp black pepper
Instructions
- Prepare the shrimp by mixing with olive oil, chili powder, salt, and black pepper.
- Cook the shrimp in a hot skillet for 2-3 minutes on each side until pink.
- Make the mango salsa by dicing the mango, red onion, and jalapeño, mixing with cilantro and lime juice in a bowl.
- Prepare the lime-chili sauce by whisking together lime juice, olive oil, honey, chili powder, salt, and pepper.
- Assemble the bowls with a base of rice or greens, layering shrimp, avocado, and mango salsa.
- Drizzle lime-chili sauce over the assembled bowls and garnish with cilantro.
Notes
Slice avocados just before serving to prevent browning. Leftovers store well in the refrigerator for up to 2 days.
