Ingredients

- 1 medium cauliflower, cut into florets
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup green olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons capers, rinsed and drained
- Juice of 1 lemon
- 1 teaspoon red wine vinegar
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
- Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.
- In a separate bowl, combine the olives, red onion, parsley, capers, lemon juice, and red wine vinegar.
- Once the cauliflower is roasted, let it cool slightly, then add it to the olive mixture and toss to combine.
- Serve warm or at room temperature.
Notes
- For added flavor, consider adding some crushed red pepper flakes.
- This salad can be made a day in advance and stored in the refrigerator.
- Feel free to substitute other types of olives based on your preference.
