Description

A refreshing and vibrant salad featuring roasted cauliflower, olives, and a zesty dressing, inspired by Sicilian flavors.


Ingredients

  • 1 medium cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup green olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons capers, rinsed and drained
  • Juice of 1 lemon
  • 1 teaspoon red wine vinegar

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.
  4. In a separate bowl, combine the olives, red onion, parsley, capers, lemon juice, and red wine vinegar.
  5. Once the cauliflower is roasted, let it cool slightly, then add it to the olive mixture and toss to combine.
  6. Serve warm or at room temperature.

Notes

  • For added flavor, consider adding some crushed red pepper flakes.
  • This salad can be made a day in advance and stored in the refrigerator.
  • Feel free to substitute other types of olives based on your preference.
