Description

A vibrant and refreshing salad celebrating the flavors of Sicily with roasted cauliflower, olives, capers, and a zesty lemon dressing.


Ingredients

  • 1 head cauliflower, cut into florets
  • 1/2 cup green olives, pitted and sliced
  • 2 tablespoons capers, rinsed
  • 1/4 cup red onion, thinly sliced
  • 1 lemon, juiced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Steam or boil the cauliflower florets until tender but still crisp, about 5 minutes.
  2. Drain and let cool completely.
  3. Combine the cooled cauliflower, olives, capers, and red onion in a large bowl.
  4. Whisk together the lemon juice, olive oil, salt, and pepper in a small bowl.
  5. Pour the dressing over the salad and toss to combine.
  6. Garnish with fresh parsley.
  7. Serve chilled or at room temperature.
