- 2–3 lbs pork loin
- 1 can (20 oz) pineapple chunks in juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1/2 tsp black pepper
- 1/4 cup green onions, chopped (for garnish)
Instructions
- Place the pork loin in the slow cooker.
- In a bowl, mix together the pineapple chunks (with juice), soy sauce, brown sugar, ketchup, garlic, ginger, and black pepper.
- Pour the mixture over the pork loin in the slow cooker.
- Cover and cook on low for 6-8 hours or until the pork is tender.
- Once cooked, shred the pork with two forks and mix it with the sauce.
- Serve hot, garnished with chopped green onions.

- For a spicier kick, add red pepper flakes to the sauce.
