Delightfully chewy pretzel bites made using sourdough discard, perfect for snacking or entertaining.
Ingredients

- 2 cups sourdough discard
- 1 cup warm water
- 2 tablespoons sugar
- 2 teaspoons salt
- 4 cups all-purpose flour
- 1/4 cup baking soda
- Coarse salt for sprinkling
Instructions
- Whisk together sourdough discard, warm water, sugar, and salt in a large mixing bowl until combined.
- Add flour gradually, mixing until a shaggy dough forms.
- Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover, and let it rise for 30-60 minutes.
- Preheat the oven to 450°F (230°C).
- Boil at least 6 cups of water in a large pot, whisk in baking soda.
- Cut the risen dough into small pieces and shape them into bite-sized balls or pretzel shapes.
- Boil each piece in the baking soda water for about 30 seconds.
- Place the boiled bites on a greased baking sheet lined with parchment paper and sprinkle with coarse salt.
- Bake for 10-12 minutes until golden brown.
- Serve warm with your favorite dipping sauces.
Notes
These pretzel bites can be refrigerated before boiling. If using an air fryer, cook for 6-8 minutes at 350°F (175°C).
