Description

Delightfully chewy pretzel bites made using sourdough discard, perfect for snacking or entertaining.


Ingredients

  • 2 cups sourdough discard
  • 1 cup warm water
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 4 cups all-purpose flour
  • 1/4 cup baking soda
  • Coarse salt for sprinkling

Instructions

  1. Whisk together sourdough discard, warm water, sugar, and salt in a large mixing bowl until combined.
  2. Add flour gradually, mixing until a shaggy dough forms.
  3. Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic.
  4. Place the kneaded dough in a greased bowl, cover, and let it rise for 30-60 minutes.
  5. Preheat the oven to 450°F (230°C).
  6. Boil at least 6 cups of water in a large pot, whisk in baking soda.
  7. Cut the risen dough into small pieces and shape them into bite-sized balls or pretzel shapes.
  8. Boil each piece in the baking soda water for about 30 seconds.
  9. Place the boiled bites on a greased baking sheet lined with parchment paper and sprinkle with coarse salt.
  10. Bake for 10-12 minutes until golden brown.
  11. Serve warm with your favorite dipping sauces.

Notes

These pretzel bites can be refrigerated before boiling. If using an air fryer, cook for 6-8 minutes at 350°F (175°C).
