Description

A delicious and savory snack featuring mushrooms stuffed with a creamy spinach and artichoke dip.


Ingredients

  • 12 large mushrooms
  • 1 cup fresh spinach, chopped
  • 1 cup artichoke hearts, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. In a bowl, mix together the spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, garlic powder, salt, and pepper.
  4. Stuff each mushroom cap with the spinach and artichoke mixture.
  5. If desired, sprinkle breadcrumbs on top of the stuffed mushrooms.
  6. Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until golden and bubbly.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For a healthier option, you can use Greek yogurt instead of sour cream.
  • Feel free to add more cheese for extra creaminess.
  • These can be made ahead of time and baked just before serving.
