Ingredients

Scale
  • 2 cups kale, chopped
  • 1 cup butternut squash, cubed
  • 1 tablespoon olive oil
  • 1/4 cup walnuts, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper, and spread it on a baking sheet.
  3. Roast the squash in the oven for 25-30 minutes, or until tender and slightly caramelized.
  4. In a large bowl, combine the chopped kale, roasted squash, walnuts, and feta cheese.
  5. Drizzle with balsamic vinegar and toss to combine.
  6. Serve immediately or chill in the refrigerator for 30 minutes before serving.
