- 1 cup fresh strawberries, pureed
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugar in a mixing bowl until light and fluffy, about 2-3 minutes.
- Add the egg and vanilla extract, mixing until fully combined.
- Fold in the pureed strawberries with a spatula until evenly distributed.
- Whisk together the flour, baking soda, and salt in a separate bowl.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Scoop tablespoon-sized amounts of dough onto a lined baking sheet, spacing them at least 2 inches apart.
- Bake for 12-15 minutes, or until the cookies’ edges turn lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For added flavor, try mixing in white chocolate chips or nuts. Store cookies in an airtight container for up to a week.
