Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugar in a mixing bowl until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. Fold in the pureed strawberries with a spatula until evenly distributed.
  5. Whisk together the flour, baking soda, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  7. Scoop tablespoon-sized amounts of dough onto a lined baking sheet, spacing them at least 2 inches apart.
  8. Bake for 12-15 minutes, or until the cookies’ edges turn lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, try mixing in white chocolate chips or nuts. Store cookies in an airtight container for up to a week.
