  • 3 tablespoons granulated sugar
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the muffin tin by lining with paper liners or lightly greasing.
  3. In a small bowl, mix cream cheese, 2 tablespoons sugar, egg yolk, and 1/2 teaspoon vanilla until smooth.

  6. Add wet ingredients to dry ingredients and stir gently until just combined.
  7. Toss diced strawberries with 1 tablespoon flour, then fold into the batter.
  8. In a small bowl, mix 1/3 cup flour and 3 tablespoons sugar, then stir in melted butter to form a crumb topping.
  9. Spoon batter into muffin cups halfway, add 1 teaspoon of cream cheese filling, and top with remaining batter.
  10. Sprinkle the crumb topping over each muffin.
  11. Bake for 18 to 22 minutes until golden brown.
  12. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

For a lighter option, substitute all-purpose flour with whole grain flour. You can use frozen strawberries; just make sure to thaw and drain them.
