- 3 tablespoons granulated sugar
- 3 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the muffin tin by lining with paper liners or lightly greasing.
- In a small bowl, mix cream cheese, 2 tablespoons sugar, egg yolk, and 1/2 teaspoon vanilla until smooth.
- In a large mixing bowl, whisk together 2 cups flour, 2/3 cup sugar, baking powder, baking soda, and salt.
- In another bowl, beat together eggs, milk, vegetable oil, and 1 teaspoon vanilla until blended.
- Add wet ingredients to dry ingredients and stir gently until just combined.
- Toss diced strawberries with 1 tablespoon flour, then fold into the batter.
- In a small bowl, mix 1/3 cup flour and 3 tablespoons sugar, then stir in melted butter to form a crumb topping.
- Spoon batter into muffin cups halfway, add 1 teaspoon of cream cheese filling, and top with remaining batter.
- Sprinkle the crumb topping over each muffin.
- Bake for 18 to 22 minutes until golden brown.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
For a lighter option, substitute all-purpose flour with whole grain flour. You can use frozen strawberries; just make sure to thaw and drain them.
