Description

A delightful Strawberry Poke Cake that features a tender white cake infused with strawberry gelatin and topped with creamy whipped cream and fresh strawberries.


Ingredients

  • 1 box white cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup strawberry jello
  • 1 cup boiling water
  • 1 cup whipped cream or Cool Whip
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your 9;13 inch baking pan.
  2. Combine the cake mix, water, vegetable oil, and eggs in a large mixing bowl and whisk until smooth.
  3. Pour the batter into the prepared pan and bake for 25 to 30 minutes.
  4. Let the cake cool in the pan for about 10 minutes.
  5. Poke holes all over the cake, spacing them about 1 inch apart.
  6. Dissolve the strawberry jello in 1 cup of boiling water until completely dissolved.
  7. Pour the jello mixture over the warm cake, allowing it to seep into the holes.
  8. Cool the cake to room temperature and then refrigerate for at least 2 hours.
  9. Spread whipped cream over the top of the cake.
  10. Garnish with fresh strawberries before serving.
  11. Cut into squares, serve, and enjoy!

Notes

Make the cake a day in advance for even better flavor absorption. Other jello flavors can be used for variations.
