Description

A refreshing summer salad featuring grilled chicken, sweet corn, and crunchy cucumbers enveloped in a creamy dressing.


Ingredients

  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prep your ingredients by grilling or roasting the chicken if it’s not pre-cooked. Dice into bite-sized pieces.
  2. Corn should be grilled until charred and sweet or drained if canned. Allow it to cool.
  3. Chop the cucumber and finely chop the red onion using a sharp knife.
  4. Mix the dressing in a bowl with mayonnaise, Greek yogurt, lime juice, smoked paprika, salt, and black pepper. Whisk until smooth.
  5. Combine the chicken, corn, cucumber, red onion, and cilantro in the bowl. Gently fold everything with a spatula.
  6. Taste the salad and adjust seasoning if necessary.
  7. Serve with crumbled feta cheese on top if desired.

Notes

For a spicier version, add diced jalapeños to the salad or dressing.
