- 1 cup sticky rice (glutinous rice)
- 1 can (13.5 ounces) coconut milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- Sesame seeds or mung beans for topping (optional)
Instructions
- Rinse and soak the sticky rice: Place the sticky rice in a bowl, cover it with cold water, and let it soak for at least 4 hours or overnight.
- Drain and steam the rice: After soaking, drain the rice and transfer it to a steamer basket lined with cheesecloth. Steam for 25-30 minutes, until the rice is tender and translucent.
- Prepare the coconut sauce: While the rice steams, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves, and save about 1/4 cup for drizzling later.
- Mix the rice and sauce: Once the rice is cooked, transfer it to a large bowl. Pour the remaining coconut milk mixture over the hot rice, stirring gently to combine. Let it sit for 15 minutes to absorb those rich flavors.
- Serve and enjoy: Serve the sticky rice on individual plates, artfully arrange the mango slices on top, drizzle with the reserved coconut sauce, and add optional toppings for a finishing touch.
Notes
Make-ahead tips: prepare sticky rice a day in advance and refrigerate it. The sauce can also be made ahead of time. Use fresh fruit for the best flavor.
