- 4 salmon fillets
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1 lime, juiced
- 2 tablespoons cilantro, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat a skillet over medium heat and add a drizzle of olive oil.
- Season the salmon fillets with salt and pepper, then place skin-side down in the skillet. Cook for 5-6 minutes on each side until golden brown.
- In a bowl, combine diced mango, red onion, red bell pepper, lime juice, and cilantro. Toss gently to mix.
- Once the salmon is cooked, top each fillet with a spoonful of mango salsa.
- Serve immediately, garnishing with additional cilantro if desired.
Notes
Pat the salmon dry before seasoning for a better sear. Salsa can be made a few hours in advance; add cilantro right before serving.
