  • 1 ripe mango, diced

Instructions

  1. Preheat a skillet over medium heat and add a drizzle of olive oil.
  2. Season the salmon fillets with salt and pepper, then place skin-side down in the skillet. Cook for 5-6 minutes on each side until golden brown.
  3. In a bowl, combine diced mango, red onion, red bell pepper, lime juice, and cilantro. Toss gently to mix.

Notes
