- 1 cup onions, diced
- 1 cup vinegar (white or apple cider)
- 1 cup sugar
- 1 tablespoon mustard seeds
- 1 tablespoon celery seeds
- Salt and black pepper to taste
Instructions
- Combine the diced bell peppers and onions in a large mixing bowl.
- Bring the vinegar, sugar, mustard seeds, celery seeds, salt, and black pepper to a simmer in a saucepan.
- Pour the warm vinegar mixture over the peppers and onions, stirring to coat.
- Allow the mixture to sit at room temperature for at least 30 minutes to marinate.
- Transfer the relish to clean mason jars and seal them tightly.
