  • 1 can (14 oz) coconut milk
  • 1 tablespoon fish sauce
  • Fresh cilantro, for garnish

Instructions

  1. Combine the ground chicken, breadcrumbs, egg, minced garlic, ginger, lime juice, Thai red curry paste, salt, and pepper in a large mixing bowl.
  2. Form the mixture into 1-inch meatballs.
  3. Heat oil in a skillet over medium heat and brown the meatballs for about 8-10 minutes.
  4. Pour in the coconut milk and fish sauce, and bring to a gentle simmer.
  5. Add the browned meatballs back to the skillet and simmer for another 10-15 minutes.
  6. Serve the meatballs over jasmine rice or noodles, garnished with fresh cilantro.
