- 1 egg

- 1 can (14 oz) coconut milk
- 1 tablespoon fish sauce
- Fresh cilantro, for garnish
- Jasmine rice or noodles, for serving
Instructions
- Combine the ground chicken, breadcrumbs, egg, minced garlic, ginger, lime juice, Thai red curry paste, salt, and pepper in a large mixing bowl.
- Form the mixture into 1-inch meatballs.
- Heat oil in a skillet over medium heat and brown the meatballs for about 8-10 minutes.
- Pour in the coconut milk and fish sauce, and bring to a gentle simmer.
- Add the browned meatballs back to the skillet and simmer for another 10-15 minutes.
- Serve the meatballs over jasmine rice or noodles, garnished with fresh cilantro.
Notes
Avoid overmixing the meatball mixture to keep them tender. Consider using ground turkey for a different flavor.
