Description

Ingredients

  • 8 oz rice noodles
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 1/2 cup water
  • 1 cup shredded carrots
  • 1 red bell pepper, sliced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • Crushed peanuts for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, and water until smooth.
  3. In a large mixing bowl, combine the cooked noodles with the peanut sauce, tossing to coat evenly.
  4. Add shredded carrots, sliced bell pepper, green onions, and cilantro to the noodles and mix well.
  5. Serve in bowls, garnished with crushed peanuts and additional cilantro if desired.

Notes

  • For a spicier version, add red pepper flakes or sriracha to the sauce.
