- 8 oz rice noodles
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tbsp sesame oil
- 1/2 cup water
- 1 cup shredded carrots
- 1 red bell pepper, sliced
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- Crushed peanuts for garnish
Instructions
- Cook the rice noodles according to package instructions, then drain and set aside.
- In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, sesame oil, and water until smooth.
- In a large mixing bowl, combine the cooked noodles with the peanut sauce, tossing to coat evenly.
- Add shredded carrots, sliced bell pepper, green onions, and cilantro to the noodles and mix well.
- Serve in bowls, garnished with crushed peanuts and additional cilantro if desired.
Notes
- For a spicier version, add red pepper flakes or sriracha to the sauce.
- This dish can be served warm or cold.
