- 4 salmon fillets
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup baby spinach
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat the olive oil in a heavy skillet over medium heat.
- Cook the salmon fillets, seasoned with salt and pepper, for 4-5 minutes on each side until golden brown.
- Remove the salmon from the skillet and set aside.
- Sauté the minced garlic in butter until fragrant, about 1 minute.
- Add the sun-dried tomatoes and cook for 2-3 minutes, then fold in the baby spinach until wilted.
- Create the creamy sauce by adding heavy cream and gradually stirring in Parmesan cheese until melted.
- Combine the salmon with the sauce, cooking for an additional 2-3 minutes.
- Garnish with fresh basil and serve hot.

Serve with garlic mashed potatoes or Mediterranean couscous for a complete meal.
