Description

A delicious Tuscan Salmon dish featuring flaky salmon fillets with a creamy sun-dried tomato sauce, garlic, and fresh spinach.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Heat the olive oil in a heavy skillet over medium heat.
  2. Cook the salmon fillets, seasoned with salt and pepper, for 4-5 minutes on each side until golden brown.
  3. Remove the salmon from the skillet and set aside.
  4. Sauté the minced garlic in butter until fragrant, about 1 minute.
  5. Add the sun-dried tomatoes and cook for 2-3 minutes, then fold in the baby spinach until wilted.
  6. Create the creamy sauce by adding heavy cream and gradually stirring in Parmesan cheese until melted.
  7. Combine the salmon with the sauce, cooking for an additional 2-3 minutes.
  8. Garnish with fresh basil and serve hot.

Notes

Serve with garlic mashed potatoes or Mediterranean couscous for a complete meal.
