Description

A vibrant and quick Vegetable Fried Rice filled with fresh vegetables and infused with aromatic garlic and ginger. Perfect for busy weeknights!


Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped
  • Salt and pepper to taste
  • Optional: sesame oil for flavor

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Sauté the minced garlic and ginger for about 30 seconds until fragrant.
  3. Add the mixed vegetables and stir-fry for 3-4 minutes until tender yet crisp.
  4. Move the veggies to one side of the skillet.
  5. Introduce the cooked rice to the empty side and break up any clumps.
  6. Pour soy sauce over the rice, mixing well with the vegetables.
  7. Incorporate the green onions and cook for another 2-3 minutes.
  8. Season with salt, pepper, and sesame oil if desired. Serve hot.

Notes

Use day-old rice for best results. Feel free to customize the vegetables based on what you have on hand.
