Description

A vibrant and refreshing drink that combines freshly squeezed lemon juice and ripe raspberries, topped with a luxurious whipped cream.


Ingredients

  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup fresh raspberries (plus extra for garnish)
  • 1 cup heavy whipping cream
  • 0.5 teaspoon vanilla extract
  • Ice cubes

Instructions

  1. Blend the fresh lemon juice, granulated sugar, fresh raspberries, and 1 cup of cold water until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher.
  3. Add the remaining 3 cups of cold water to the pitcher and stir well.
  4. Whip the heavy cream and vanilla extract in a mixing bowl until soft peaks form.
  5. Fold 1 cup of the lemonade mixture into the whipped cream.
  6. Serve over ice and top each glass with the whipped mixture and garnish with raspberries and a lemon slice.

Notes

Make the lemonade base ahead of time and whip the cream just before serving for optimal freshness.
