- 2 ham hocks
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped

- 6 cups chicken or vegetable broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Soak the beans: Begin the night before by soaking the white beans in ample water. This allows them to plump up, providing the ideal texture. Drain them before adding to the pot.
- Prepare the stockpot: In a large stockpot, combine the ham hocks with the broth. Bring it to a gentle simmer.
- Add the veggies: Stir in the soaked beans, chopped onion, carrots, celery, minced garlic, bay leaves, and thyme. Stir well to combine.
- Simmer: Allow the mixture to simmer gently for about 90 to 120 minutes, until the beans are tender and the ham hocks begin to fall apart.
- Shred the ham: Carefully remove the ham hocks from the pot and shred the tender meat. Return it to the pot.
- Taste and season: Adjust the seasoning with salt and pepper. Stir to incorporate.
- Serve up: Ladle the soup into bowls, garnishing with fresh parsley.
