- 4 cups raspberries, fresh or frozen
- ½ cup water
- ¾ cup granulated sugar
- 1 tablespoon lemon juice
- 1 ½ cups heavy cream
- 16 ounces mascarpone cheese
- ¾ cup raspberry syrup
- 1 teaspoon vanilla
- 1 (7 oz) package Savoiardi ladyfingers
- 1 ounce good-quality white chocolate, shaved
Instructions
- In a medium saucepan, combine raspberries, water, sugar, and lemon juice. Cook over medium heat, stirring gently until bubbling. Reduce heat and simmer for about 10 minutes until thickened. Strain to separate the syrup from solids and let cool.
- In a mixing bowl, whip the heavy cream until stiff peaks form.
- In another bowl, blend mascarpone cheese, sugar, raspberry syrup, and vanilla until smooth. Gently fold in the whipped cream.
- Dip ladyfingers in the remaining raspberry syrup and layer half in the bottom of a baking dish.
- Spoon half of the mascarpone filling over the ladyfingers. Repeat layers, finishing with the cream on top.
- Chill in the refrigerator for at least 4 hours or overnight. Before serving, shave white chocolate on top.
