Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery; sauté until softened.
  3. Stir in garlic and thyme; cook for another minute.
  4. Add chopped mushrooms and cook until they release their moisture.
  5. Pour in vegetable broth and bring to a boil.
