Ingredients

- 2 cups wild mushrooms, chopped
- 1 cup barley
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery; sauté until softened.
- Stir in garlic and thyme; cook for another minute.
- Add chopped mushrooms and cook until they release their moisture.
- Pour in vegetable broth and bring to a boil.
- Add barley, reduce heat, and simmer for 30-40 minutes until barley is tender.
- Season with salt and pepper to taste before serving.
