Ingredients

  • 1 cup wild rice
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1/2 cup dried cranberries
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the wild rice under cold water.
  2. In a pot, bring the vegetable broth to a boil and add the wild rice.
  3. Reduce heat, cover, and simmer for about 45 minutes or until the rice is tender.
  4. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  5. Add the sliced mushrooms and cook until they are soft.
  6. Stir in the dried cranberries and cooked wild rice, mixing well.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
