- 2 cups vegetable broth

Instructions
- Rinse the wild rice under cold water.
- In a pot, bring the vegetable broth to a boil and add the wild rice.
- Reduce heat, cover, and simmer for about 45 minutes or until the rice is tender.
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the sliced mushrooms and cook until they are soft.
- Stir in the dried cranberries and cooked wild rice, mixing well.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
