- 1/2 cup Fresh Parsley, chopped
- 1/4 cup Fresh Cilantro, chopped
- 4 cloves Garlic, minced
- 1/4 cup Red Wine Vinegar
- 1/2 cup Olive Oil
- Salt, to taste
- Pepper, to taste
- Roasted Vegetables, for serving
- Crusty Bread, for serving
Instructions
- Preheat the grill to high heat.
- Season the skirt steak with salt and pepper.
- Grill the steak for 3-5 minutes on each side until desired doneness.
- Make the chimichurri by whisking parsley, cilantro, garlic, vinegar, olive oil, salt, and pepper in a bowl.
- Rest the steak for 5-10 minutes after grilling.
- Slice the steak against the grain and serve with chimichurri, roasted vegetables, and crusty bread.
Notes
Chimichurri can be made a day ahead; refrigerate in an airtight container. For a quicker cooking method, use an air fryer or roast in the oven.
