- 1 1/2 cups vanilla wafer crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup ripe bananas, mashed
- 1 cup heavy whipping cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- Sliced bananas for topping
- Additional whipped cream for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust: In a bowl, mix together the vanilla wafer crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and allow to cool completely.
- Create the filling: Beat cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
- Incorporate the mashed bananas into the cream cheese mixture.
- Spread the mixture over the cooled crust.
- Make the whipped topping: Whip heavy cream, sugar, and remaining 1 teaspoon vanilla until stiff peaks form.
- Top the cheesecake with the whipped cream.
- Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
- Garnish just before serving with sliced bananas and additional whipped cream.
Notes
This cheesecake can be prepared a day in advance. Store leftovers tightly covered in the refrigerator for up to 5 days.
