Description

A delightful Banana Cream Cheesecake balancing rich flavors with fresh bananas and a crunchy crust.


Ingredients

  • 1 1/2 cups vanilla wafer crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup ripe bananas, mashed
  • 1 cup heavy whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Sliced bananas for topping
  • Additional whipped cream for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust: In a bowl, mix together the vanilla wafer crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes and allow to cool completely.
  4. Create the filling: Beat cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth.
  5. Incorporate the mashed bananas into the cream cheese mixture.
  6. Spread the mixture over the cooled crust.
  7. Make the whipped topping: Whip heavy cream, sugar, and remaining 1 teaspoon vanilla until stiff peaks form.
  8. Top the cheesecake with the whipped cream.
  9. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  10. Garnish just before serving with sliced bananas and additional whipped cream.

Notes

This cheesecake can be prepared a day in advance. Store leftovers tightly covered in the refrigerator for up to 5 days.
