- 1 tsp Allspice
- 1 Scotch Bonnet Pepper, minced
- 2 cloves Garlic, minced
- 1 tsp Fresh Ginger, grated
- 1 tsp Fresh Thyme
- 2 cups Rice
- 1 cup Fresh Pineapple, chopped
- 1/2 Red Onion, diced
- 1/4 cup Fresh Cilantro, chopped
- 2 tbsp Lime Juice
- Salt, to taste
- Plantain Chips, for serving
Instructions
- Marinate the chicken: In a mixing bowl, combine allspice, minced Scotch bonnet peppers, garlic, ginger, thyme, and salt. Add chicken breasts, ensuring they are well coated. Cover and let marinate for at least 1 hour or overnight.
- Cook the rice: While the chicken marinates, prepare rice according to package instructions.
- Grill or bake the chicken: Preheat grill or oven. Cook marinated chicken until fully cooked through, about 15-20 minutes on the grill or 25-30 minutes in the oven.
- Prepare the pineapple salsa: In a bowl, combine chopped pineapple, red onion, cilantro, lime juice, and a pinch of salt. Adjust to taste.
- Assemble the bowl: Slice cooked chicken into strips and serve over fluffy rice topped with pineapple salsa.
- Garnish and serve: Add plantain chips or a green salad on the side.
Notes
For richer flavor, marinate chicken overnight. Adjust the heat of the dish using more or fewer Scotch bonnet peppers.
