  • 2 tbsp Lime Juice

Instructions

  1. Marinate the chicken: In a mixing bowl, combine allspice, minced Scotch bonnet peppers, garlic, ginger, thyme, and salt. Add chicken breasts, ensuring they are well coated. Cover and let marinate for at least 1 hour or overnight.
  2. Cook the rice: While the chicken marinates, prepare rice according to package instructions.
  3. Grill or bake the chicken: Preheat grill or oven. Cook marinated chicken until fully cooked through, about 15-20 minutes on the grill or 25-30 minutes in the oven.
  4. Prepare the pineapple salsa: In a bowl, combine chopped pineapple, red onion, cilantro, lime juice, and a pinch of salt. Adjust to taste.
  5. Assemble the bowl: Slice cooked chicken into strips and serve over fluffy rice topped with pineapple salsa.
  6. Garnish and serve: Add plantain chips or a green salad on the side.

Notes
