Delicious churro muffins featuring a crispy cinnamon-sugar exterior and a gooey dulce de leche center.

- 1 cup all-purpose flour
- 1/2 cup granulated sugar (plus additional for rolling)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon (with more for rolling)
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dulce de leche or caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin to ensure easy removal.
- Combine the flour, 1/2 cup sugar, baking powder, salt, and ground cinnamon in a mixing bowl. Whisk until thoroughly combined.
- Whisk together the melted butter, egg, and vanilla in another bowl until well incorporated.
- Fold the wet ingredients into the dry mixture using a rubber spatula, mixing only until combined; it’s okay if there are a few lumps.
- Fill each muffin cup halfway with batter, add a generous spoonful of dulce de leche in the center, then top with more batter, filling each cup to about two-thirds full.
- Bake in the preheated oven for 15 to 20 minutes until the tops turn golden brown and a toothpick inserted into the center comes out clean.
- Roll the muffins while warm in a mixture of 1/4 cup sugar and 1 tablespoon of ground cinnamon until fully coated.
- Serve immediately and enjoy!
Notes
For a dairy-free version, substitute coconut oil for butter and use a different filling like Nutella.
