Description

Ingredients

  • 1/2 cup granulated sugar (plus additional for rolling)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (with more for rolling)
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dulce de leche or caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin to ensure easy removal.
  2. Combine the flour, 1/2 cup sugar, baking powder, salt, and ground cinnamon in a mixing bowl. Whisk until thoroughly combined.
  3. Whisk together the melted butter, egg, and vanilla in another bowl until well incorporated.
  4. Fold the wet ingredients into the dry mixture using a rubber spatula, mixing only until combined; it’s okay if there are a few lumps.
  5. Fill each muffin cup halfway with batter, add a generous spoonful of dulce de leche in the center, then top with more batter, filling each cup to about two-thirds full.
  6. Bake in the preheated oven for 15 to 20 minutes until the tops turn golden brown and a toothpick inserted into the center comes out clean.
  7. Roll the muffins while warm in a mixture of 1/4 cup sugar and 1 tablespoon of ground cinnamon until fully coated.
  8. Serve immediately and enjoy!

Notes

For a dairy-free version, substitute coconut oil for butter and use a different filling like Nutella.
