Instructions

  1. Begin by roasting or boiling the beets until tender, about 30-45 minutes depending on the size. If roasting, wrap them in foil and place them in a preheated oven at 400°F (200°C). Once cooked, let them cool, then peel and dice them.
  2. Chop the cucumbers into bite-sized pieces.
  3. Finely chop the fresh dill.
  4. In a large mixing bowl, combine the diced beets, chopped cucumbers, and feta cheese.
  5. Drizzle with olive oil and lemon juice, then season generously with salt and pepper to taste.
  6. Gently toss the salad to combine all the ingredients.
  7. Serve chilled or at room temperature.
