Instructions
- Begin by roasting or boiling the beets until tender, about 30-45 minutes depending on the size. If roasting, wrap them in foil and place them in a preheated oven at 400°F (200°C). Once cooked, let them cool, then peel and dice them.
- Chop the cucumbers into bite-sized pieces.
- Finely chop the fresh dill.
- In a large mixing bowl, combine the diced beets, chopped cucumbers, and feta cheese.
- Drizzle with olive oil and lemon juice, then season generously with salt and pepper to taste.
- Gently toss the salad to combine all the ingredients.
- Serve chilled or at room temperature.
