Ingredients

  • 4 boneless, skinless Chicken Breasts
  • 1 cup Tzatziki Sauce
  • 1/2 cup Crumbled Feta Cheese
  • 1 cup Cherry Tomatoes
  • 1/2 cup Olives (Kalamata or green)
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • Juice of 1 Lemon
  • 1 teaspoon Dried Oregano
  • Salt and Pepper to taste

Instructions

  1. Heat a skillet over medium heat and add the olive oil until shimmering.
  2. Season the chicken breasts with minced garlic, oregano, salt, and pepper.
  3. Cook the chicken for 6-7 minutes on each side until golden-brown and cooked through (165°F/75°C).
  4. Add in cherry tomatoes and olives in the final minutes of cooking.
  5. Remove from heat and sprinkle with crumbled feta cheese.
  6. Serve with a dollop of tzatziki sauce and a squeeze of fresh lemon juice.
