Ingredients

- 2 medium sweet potatoes
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh thyme for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4 inch rounds.
- In a bowl, mix olive oil, salt, and pepper. Toss the sweet potato rounds in the mixture.
- Arrange the sweet potato rounds on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until tender and slightly crispy.
- Remove from the oven and sprinkle crumbled feta cheese on top.
- Drizzle honey over the feta and sweet potatoes.
- Garnish with fresh thyme before serving.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the olive oil mixture.
- These can be served warm or at room temperature.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
