- 2 tablespoons Olive Oil
- 1 cup Pearl Orzo
- 2 cups Chicken Broth
- ¼ cup Fresh Lemon Juice
- Zest of 1 Lemon
- ½ cup Feta Cheese, crumbled
- 2 cloves Garlic, minced
- ¼ cup Fresh Parsley, chopped
- Salt & Pepper to taste
Instructions
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, and sear for 5-7 minutes on each side until golden brown.
- Set the Chicken Aside: Remove chicken from the skillet and place on a separate plate.
- Sauté the Garlic: Add minced garlic to the skillet and sauté for about a minute until fragrant.
- Add the Pearl Orzo: Stir in the pearl orzo, mixing thoroughly with the garlic.
- Pour in Broth and Lemon: Add chicken broth, lemon juice, and lemon zest to the skillet, stirring well.
- Simmer with Chicken: Return the seared chicken to the skillet, cover, and simmer for about 20 minutes.
- Garnish and Serve: Remove from heat, sprinkle feta cheese and parsley on top, and serve warm.
