  • 1 cup Pearl Orzo
  • 2 cups Chicken Broth
  • ¼ cup Fresh Lemon Juice
  • Zest of 1 Lemon
  • ½ cup Feta Cheese, crumbled
  • 2 cloves Garlic, minced
  • ¼ cup Fresh Parsley, chopped
  • Salt & Pepper to taste

Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, and sear for 5-7 minutes on each side until golden brown.
  2. Set the Chicken Aside: Remove chicken from the skillet and place on a separate plate.
  3. Sauté the Garlic: Add minced garlic to the skillet and sauté for about a minute until fragrant.
  4. Add the Pearl Orzo: Stir in the pearl orzo, mixing thoroughly with the garlic.
  5. Pour in Broth and Lemon: Add chicken broth, lemon juice, and lemon zest to the skillet, stirring well.
  6. Simmer with Chicken: Return the seared chicken to the skillet, cover, and simmer for about 20 minutes.
  7. Garnish and Serve: Remove from heat, sprinkle feta cheese and parsley on top, and serve warm.
