- 4 large bell peppers
- 1 pound ground beef or turkey
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 jar marinara sauce (low sugar)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Cook the ground beef or turkey in a skillet until browned; drain excess fat.
- Add marinara sauce, ricotta cheese, Italian seasoning, salt, and pepper into the skillet; mix well.
- Stuff each bell pepper with the mixture and place them upright in a baking dish.
- Drizzle the tops with olive oil.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil, sprinkle mozzarella cheese on top, and bake uncovered for an additional 10 minutes.
- Let cool slightly before serving.
Notes
You can prepare the filling a day in advance. For a vegetarian option, replace the meat with sautéed mushrooms and spinach.
