- 4 Fresh Salmon Fillets
- 1 cup Mango Puree
- 1/4 cup Low-Sodium Soy Sauce
- 1/4 cup Brown Sugar
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 1 teaspoon Chili Flakes
- Jasmine Rice & Vegetables (optional, for serving)
Instructions
- Whisk together the mango puree, soy sauce, brown sugar, minced garlic, grated ginger, and chili flakes in a mixing bowl to create the marinade.
- Place the salmon fillets in a Ziplock bag or baking dish, pour the marinade over them, and marinate in the fridge for at least 30 minutes.
- Preheat the grill to medium-high or the oven to 400°F.
- Cook the marinated salmon on the grill or in the oven for 15-20 minutes until it flakes easily with a fork.
- Serve the salmon over a bed of jasmine rice or alongside vegetables.
Notes
For a make-ahead option, marinate salmon fillets overnight. You can also cook it in an air fryer at 375°F for about 12-15 minutes.
