Ingredients

  • 4 Fresh Salmon Fillets
  • 1 cup Mango Puree
  • 1/4 cup Low-Sodium Soy Sauce
  • 1/4 cup Brown Sugar
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 teaspoon Chili Flakes
  • Jasmine Rice & Vegetables (optional, for serving)

Instructions

  1. Whisk together the mango puree, soy sauce, brown sugar, minced garlic, grated ginger, and chili flakes in a mixing bowl to create the marinade.
  2. Place the salmon fillets in a Ziplock bag or baking dish, pour the marinade over them, and marinate in the fridge for at least 30 minutes.
  3. Preheat the grill to medium-high or the oven to 400°F.
  4. Cook the marinated salmon on the grill or in the oven for 15-20 minutes until it flakes easily with a fork.
  5. Serve the salmon over a bed of jasmine rice or alongside vegetables.

Notes

For a make-ahead option, marinate salmon fillets overnight. You can also cook it in an air fryer at 375°F for about 12-15 minutes.
