Instructions
- Preheat your oven to 400°F (200°C).
- Whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper in a large bowl.
- Add the chicken breasts to the bowl and coat them thoroughly with the marinade.
- Allow the chicken to sit for about 15 minutes to absorb the flavors.
- Arrange the halved potatoes on one side of a baking sheet, placing the marinated chicken on the other side.
- Pour any leftover marinade over the chicken.
- Bake for 20 minutes to roast the chicken and caramelize the potatoes.
- Add the green beans to the baking sheet and toss everything gently.
- Return to the oven and bake for an additional 15-20 minutes until cooked through.
- Let everything rest for a few minutes, garnish with fresh herbs, and serve hot.
