Instructions
- Cook the orzo: Start by bringing a pot of salted water to a boil. Add in the orzo and cook according to package instructions until al dente. Drain and set aside, ensuring you save some of that starchy pasta water for later!
- Sear the salmon: In the same pot, heat a drizzle of olive oil over medium heat. Season the salmon fillets generously with salt and pepper. Place them skin-side down in the pot, searing for about 4-5 minutes on each side until golden brown and cooked through. Gently remove the salmon from the pot and set aside.
- Sauté garlic: Use the same pot (don’t wash it just yet!) and toss in minced garlic. Sauté for about 30 seconds until the garlic becomes fragrant, ensuring not to let it brown too much to avoid bitterness.
- Create the creamy sauce: Add heavy cream and fresh lemon juice to the pot, stirring to combine and creating a luxuriously creamy sauce.
- Mix in the orzo: Return the cooked orzo to the pot, along with chopped fresh herbs and lemon zest. Mix everything together until it’s heated through, adding a splash of reserved pasta water if the mixture feels too thick.
- Serve and enjoy: Dish up the creamy orzo in bowls, topping each serving with a beautifully seared salmon fillet. Garnish with extra herbs and a sprinkle of lemon zest for that Instagram-worthy finish!
Notes
You can prepare the orzo in advance and store it in the fridge. Consider using an air fryer or grilling the salmon for a smoky flavor.
