A delightful baked French toast infused with ripe peaches and a creamy custard, perfect for breakfast or brunch.
Ingredients

- 4 cups of bread, cubed (challah or brioche)
- 2 ripe peaches, sliced
- 8 large eggs
- 2 cups of milk (whole, almond, or oat)
- 1 cup of heavy cream
- 1/2 cup of sugar
- 1 tablespoon of vanilla extract
- 1 teaspoon of cinnamon
- Pinch of salt
- Powdered sugar for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare your baking dish by greasing it with butter or cooking spray.
- Layer the cubed bread and sliced peaches in the baking dish.
- Whisk together the eggs, milk, heavy cream, sugar, vanilla, cinnamon, and salt until smooth.
- Pour the custard mixture over the bread and peaches, pressing down gently.
- Refrigerate covered with foil for at least 30 minutes, or overnight.
- Bake covered for 30 minutes, then uncover and bake for an additional 15-20 minutes until golden brown.
- Serve warm, dusted with powdered sugar.
Notes
Make a day ahead and let it soak overnight for best results. Customize with nuts or different fruits as desired.
