- 1 cup sweet shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- Cream the butter and sugars in a large bowl until light and fluffy, about 3-5 minutes.
- Incorporate the eggs one at a time, then stir in the vanilla extract.
- Mix the flour, baking soda, and salt in a separate bowl.
- Combine the dry ingredients with the wet mixture until just incorporated.
- Fold in the pecans and coconut gently.
- Shape rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, until the edges are golden brown.
- Cool on baking sheets for a few minutes before transferring to wire racks.
