Delicious cookies featuring caramelized pineapple and rich butter, reminiscent of classic pineapple upside-down cake but in a handheld treat.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 can pineapple rings, drained
- Maraschino cherries (optional)
- Coconut flakes (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and packed brown sugar until light and fluffy, about 3 minutes.
- Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
- Whisk together the flour, baking soda, and salt in another bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Dollop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Press a pineapple ring into the center of each cookie.
- Top each cookie with a Maraschino cherry and sprinkle with extra brown sugar.
- Bake for 12-15 minutes until edges are lightly golden and centers are slightly underbaked.
- Cool slightly on the baking sheet before transferring to a wire rack to cool completely.
Notes
Make ahead by preparing the dough up to 24 hours in advance. For a unique twist, substitute coconut oil for butter.
