Description

Delicious cookies featuring caramelized pineapple and rich butter, reminiscent of classic pineapple upside-down cake but in a handheld treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can pineapple rings, drained
  • Maraschino cherries (optional)
  • Coconut flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and packed brown sugar until light and fluffy, about 3 minutes.
  3. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Dollop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Press a pineapple ring into the center of each cookie.
  8. Top each cookie with a Maraschino cherry and sprinkle with extra brown sugar.
  9. Bake for 12-15 minutes until edges are lightly golden and centers are slightly underbaked.
  10. Cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

Make ahead by preparing the dough up to 24 hours in advance. For a unique twist, substitute coconut oil for butter.
