Description

Ingredients

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 lemon, quartered
  • Fresh herbs (such as rosemary, thyme, or parsley)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken all over with olive oil, then season with salt and pepper.
  4. Stuff the cavity with minced garlic, lemon quarters, and fresh herbs.
  5. Place the chicken breast side up in your roasting pan.
  6. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
  8. Serve with your choice of sides.

Notes

Make the chicken ahead by marinating with herbs and olive oil the night before. You can also adapt this recipe for an air fryer.
